  • Salmon head

  • Water (enough to cover the fish heads)

  • 1 cup seafood stock

  • 2 teaspoons vegetable base or roasted vegetable paste

  • Juice of half a lemon

  • 1 tablespoon fresh chopped Italian herbs

  • 4-5 bay leaves

  • 1 tablespoon low-sodium seasoning mix (e.g., Mrs. Dash)

  1. Prepare fish heads. In this case, we placed salmon heads in a large pot after removing excess liquid.

  2. Turn on the flame and place the pot with the salmon head on the stove. Add enough water to cover the fish heads completely.

  3. Pour the seafood stock into the pot with the fish heads and add the vegetable base or roasted vegetable paste, around 2 teaspoons, for added flavor. This eliminates the need for chopping onions, carrots, and celery.

  4. Squeeze the juice of half a lemon into the fish broth.

  5. Add the fresh chopped Italian herbs and 4-5 bay leaves.
