Ingredients in Mango Habanero Sauce
1 large mango
4 medium sized tomatoes
4 cloves of garlic cleaned
1 lime
1 habanero pepper
1 red onion
5 sprigs of cilantro
Salt and pepper to taste
Step-by-Step Directions for this Roasted Mango Habanero Recipe

Halve the red onion and tomatoes and remove the stems. Lightly oil your roasting pan. Place the red onions, tomatoes, habanero pepper and garlic onto the broiler pan and lightly brush them with olive oil.

Pre-heat the oven to 425 degrees Fahrenheit. Place into the oven or onto the grill and roast/grill for about 10 minutes.

While the vegetables are roasting remove the pit from the mango and use a large spoon to scoop the fruit away from the skin and place into the mixer.

The skin will begin to bubble and seperate on the tomatoes. This is when they are ready to be pulled out.

Remove the stems from the cilantro and add to the mixer When the vegetable are done roasting allow them to cool enough to handle and remove the skins from the tomatoes and add them to the blender. Finally add the mango and lime juice to the blender.

Mix on low until all of the ingredients are thoroughly combined. To maintain a nice texture for the salsa it is important not to overmix when doing this step.

Serve this mango habanero salsa immediately over chicken wings or store in an air-tight container and place into the refrigerator for later use.
